• 2 lbs. veal fillet
  • 1/4 c. all-purpose flour
  • Juice of 1 1/2 fresh lemon
  • 1/2 tsp. salt
  • 6 tbsp. butter
  • 1/4 tsp. black pepper
  • 1/4 c. parsley, freshly chopped

Cut veal into 1/2 inch slices and pound very thin. Dip the slices into flour. Place butter in large skillet and heat. Add veal and brown on both sides over high heat. Add salt and pepper and cook for 5 minutes. Add lemon juice and parsley and cook for 1 minute. Stir well. Arrange on hot plate and spoon sauce over veal. Serve with a green vegetable. Serves 4.
